Srikhand and famoue vegetable of Sangri and Kair

Srikhand is all time desert. It is famous in Gujrat and Rajathan. Vegetable of Kair and Sangri is famous all over world and it native place is Rajasthan


Shrikhand was introduced by Gujarat. Now it is most popular desert of only West India but also liked in whole world. Earlier it was made on Janmasthmi, but nowadays it made round the year and it has part of every festival. Let us we make this decent desert.
What you need for Shreekhand
Fresh yogurt - 600 gms. (3 cup)
Sugar - 60gms (Three service spoon) grated
Saffron - 20 stick
Milk - One service spoon
Cardamom - 5 (Peeled and grated)
Pistachios - 10 (Chopped)
Almonds - 10 (Chopped)
How to make Shreekhand
Pour the fresh curd in a thin cotton cloth and tie it up. Hang the cloth for at least 5 hours. Strain all the water from it. Dip Saffron sticks in the milk. Mix sugar and cardamom in yogurt. Put the saffron milk into the curd and mix it properly. Put some pistachios and almonds in the mixture.
Now Shreekhand is ready. Shift it in a bowel. Garnish Shreekhand with the balance almonds and pistachios. Keep it in the fridge for 4 hours. Serve it chilled.

Kair Sangari (Dessert berries and beans) vegetable is famous in Rajasthan. This vegetable is more oily and spice but it is very tasty. Sangri is fruit of famous desert tree of Rajasthan "Kheyjari". This tree produce sangri once in two years and in less quantity, about 12 kg per tree, so it costly. It is available in market as dry vegetable. Kair is small Round and sangari 2-4 inches long thin beans.
Ingredients for Kair Sangri vegetable
Sangri dry-1cup
Kair dry- 1/4cup
Dry mango-10 piece
Whole dry red chilly-5 piece
Oil 3-4 table spoon
Raisins 2 table spoon ( optional)
Cumin seeds - ½ tea spoon
Asafetida - 2Pinch
Red chilly powder- 1 tea spoon
Coriander powder- 2 tes spoon
Turmeric powder -1 tea spoon
Salt- 1 tea spoon (as per taste)

Method- How to make Kair Sangri vegetable
Clean and wash sangri, kair and dry mango properly. Soak these in water for whole night. If you wants to make sangri kair vegetable immediately, than you can boil these. Take oil in pan and place it on flame. When oil gets hot add cumin seeds, asafoetida. When cumin roosted add turmeric powder, red chilly powder, raisins, coriander powder. Add kair sangri and dry mongo in it. Cook it for 4-5 minutes. Kair and sangri vegetable is ready to eat. Serve this delicious vegetable with poori , paranthas.
