Healthy Low Calorie Recipes

Most people are health conscious these days preferring to count calories when they plan their daily meals.

         

There is a feeling that low calorie diets are tasteless which need not be the case at all.I am writing down a few recipes that are easy to prepare and also are tasty.
Spring onions are very healthy and adds unique taste to the food. I have used spring onions in all the recipes given below.

Pasta Soup



Pasta - a handful (cooked) use the water drained for the soup
Tomatoes - 3 chopped
Carrots two - grated
Onion - 2 finely chopped ( keep some for seasoning)
Greens of your choice a handful ( coriander leaves, palak,mint ,dil)
Garlic 4 or 5 seeds grated
Salt and pepper to taste
Butter or oil

Method
Combine tomatoes ,carrots, onions, garlic and greens together adding 3 cups of water. Pressure cook . Blend for a few seconds only, add the pasta,salt and pepper and boil once . Heat oil for butter and fry the onions until golden brown, add to the soup and serve hot.



Chicken Hotpot



Chicken 500 gms ( after cleaning) - cut to desired sized pieces
Onions - 2 chopped
Carrots - 2 chopped
Tomatoes - 3 large chopped
Shelled peas one cup
Small Potatoes - 4 or five , scrubbed well and pricked all over
Spring onions one bunch chopped
Grated ginger and garlic
Curds one small cup
Turmeric powder
Chilly powder to taste
Gharam masala - one table spoon
Coriander leaves
Salt and pepper to taste
Oil

Method
Heat oil in a large pan. Add the chopped onions, grated ginger and garlic and fry well. Add the turmeric powder, chilly powder and the chopped tomatoes. Fry for a while and add the chicken pieces and mix well and let it cook for a couple of minutes so that the chicken absorbs the flavor of the spices. Add the potatoes, peas and the carrots. mix well again adding salt and pepper.

Add 3 or 4 cups of water , curds and mix well .After the dish begins to boil cook on slow fire until the chicken is tender. Takes about 35 - 40 minutes. Now add the Gharam masala, chopped spring onions and the coriander leaves and mix thoroughly checking salt. Add more salt or pepper if necessary. Boil until the gravy thickens.
Serve hot with rice or bread

Khus Khus delite



Khus khus 1 cup
Onion - one chopped
Grated garlic a spoonful
Spring onions one bunch - chopped
Coriander leaves - a handful chopped finely
Grated carrots 2
Chilly flakes a spoonful
Lime juice - one tablespoonful
Salt and pepper according to taste
Oil

Method
Heat oil and add the grated garlic and the chopped onions.Fry for a while and add the Carrots, chilly flakes and 2 cups of water. Let the water boil .Add the Khus khus, salt and pepper , spring onions and mix well.Switch off the stove , cover the dish with a lid and leave it for about 15-20 minutes. The Khus khus absorbs all the liquid and is ready to serve after the waiting period. Sprinkle coriander leaves and gently mix with a fork and serve with yogurt .
( you can experiement and add shrimps or cooked boneless chicken to the dish while frying and before adding water )
