How to make Brinjal Masala Kuzhambu?

Procedure to make Brinjal Masala Kuzhambu



Brinjal - 1/4 kg
Onion - 2 (Medium size)
Tamarind - Size of a lemon
Grated cocunut - 1 cup
Coriander seeds - 4 tsp
Channa dhal - 2 tsp
Red chilles - 2 to 3
Cloves - 3 to 4
Cardamom - 3 to 4
Cinnamon - A small piece
Poppy seeds - 1 tsp
Mustard seeds - 1 tsp
Urad dhal - 1 tsp
Curry leaves - little
Salt - As per taste
Oil - 3 tsp

Preparation time : 30 minutes


1. Heat 2 tsp of oil in a pan. Add Coriander seeds,cinnamon,cloves, cardamom, poppy seeds,red chillies and fry for sometime.
2. Take out the fried items and allow it to cool.
3. After it is cooled, grind together all the above along with cocunut to a fine paste in a mixie.
4. Cut onion to thin long slices.
5. Take a small bowl with water and cut the brinjals to thin long slices and put it. ( Whenever we cut brinjals we should put it in water.Otherwise it will become black )
6. Extract tamarind juice for 1 cup and 1 1/2 cups of water to it.
7. Heat 2 tsp of oil in a pan and put onion in it.
8. When onion becomes soft and the colour changes to slight brown, add the chopped brinjal to it and fry.
9. While frying brinjal on one side, heat 1 tsp of oil in another pan and add mustard seeds.
10. While mustard seeds sputters out, add urad dhal and curry leaves to it.
11. Then add already prepared tamarind juice, grinded paste,salt,fried brinjal and onion and boil it.
12. After it is boiled, yellow foam appears on the corners of the vessel.Remove it from the flame and serve it hot.

Note : Coriander leaves can also be added if you wish.
