PEPPER RASAM AND ITS IMPORTANCE

Pepper is a very easily available spice in India, which has many uses. This is also called as "The King Of Spices". Pepper is very generally used spice in all the Indian recipes.

Rasam is a term used to describe the South Indian Soup. Here is an excellent soup made with Pepper, termed as "Pepper Rasam"


Actions: Analgesic, antiseptic, antispasmodic, carminative, diaphoretic, digestive, diuretic, febrifuge, rubefacient, stimulant, stomachic.

Mood: Stimulating. Good for mental clarity.

Spiritual: Warming and energizing.



PREPARATION OF RASAM POWDER

INGREDIENTS

Dhaniya seeds/ coriander seeds - 4 tablespoons
Jeera/Cumin seeds-1/2 teaspoon
Asafoetida-1/4 teaspoon
Pepper seeds -1/2 tablespoon
Curry leaves - as required
Garlic - 12 pieces
Red chillies - 2
Ghee/ clarified butter - 1 teaspoon

PREPARATION

1) Take a pan, put ghee.
2) Now add all the above mentioned items except garlic, and fry.
3) Now blend the above fried items and raw garlic too.
4) Now your Rasam powder is ready.


PEPPER RASAM


FOR TEMPERING:

Ghee/Clarified butter -1 full teaspoon
Mustard seeds (avalu)-1/4th teaspoon
Jeera/ Cumin seeds-1/4th teaspoon
Fenugreek seeds-pinch
Red chilly-1
Pepper powder- 1/2 teaspoon
Curry leaves-as required.
Asafoetida-pinch.



PROCEDURE

1) Take ghee in a bowl for tempering, add all items mentioned above in tempering section and add water, tamarind, curry leaves, green chillies,salt.
2) Let it boil. Add rasam powder and coriander leaves and let it boil for 5 minutes.
3) Your Pepper Rasam is ready!.

This is a different method for preparing pepper rasam. Usually i will make pepper make in some other way. I will try out this recipe one day.
