Dosa and Varieties: How to make-Part I

This article describes the dosa, which is a South Indian recipe , and the varieties of dosa which can be made.

         

The, dosa, is a South Indian recipe. This food, high in carbohydrates and proteins, is a typical South Indian breakfast item. The recipe for a typical dosa(plain dosa) is as follows:

Ingredients

  • Urad Dal: 1 cup

  • Rice, finely grounded: 2 cups (Alternatively rice flour)

  • Fenugreek seeds

  • Salt to taste

  • Hing and Cumin Seeds: 1 tsp

  • Oil


Method

1. Soak the ural dal, rice and fenugreek seeds for about 2-3 hours.
2. Drain the water and grind in a mixie. Alternatively, soak the ural dal with fenugreek seeds and grind with rice flour to smooth paste. Let it ferment for at least 8hrs.
3. Once the mixture is fermented, add the salt, hing and cumin seeds. Put oil on the pan and make the dosas by pouring a ladleful of the batter and cooking on both sides.



Here, the rice flour determines the crispiness and the ease of spread of the dosas. Salt is added after fermenting as salt inhibits the process of fermentation. The other varieties of dosas are:

A)WHEAT DOSA

Ingredients: Wheat flour - 2 cups; Rice flour- 2 cups; Salt-to taste; Curds-1/2 cup (optional); sliced green chillies and ginger pieces: 1 tsp

Method
1. Mix the wheat flour, rice flour and curds with salt. Make a dosa batter and leave it for 5-10 minutes.
2. Add finely cut green chillies and ginger.
3. Heat oil and prepare some seasoning with mustard and chana dal. Add it to the batter and mix well.
4. Heat tawa and pour the dosa batter onto it after smearing oil. Cook for about 4-5 minutes till the dosas get a reddish tinge


B)MASALA DOSA

Ingredients: Urad Dal- 1 cup; Rice, finely grounded- 2 cups (Alternatively, rice flour); Fenugreek(Methi seeds)- a few; Salt to taste; Oil- 1 tbsp; Vegetable curry[for the masala]

Method
1. Make the regular, plain dosa by mixing pasted ural dal and grounded rice/rice flour, as stated in the beginning.
2. On the dosa pan, apply clarified butter(ghee), instead of oil. Also, when frying the dosa, add a little more oil, flatten the edges of the dosa with the spatula, and put the masala curry on top of the dosa.
3. Cook on one side. Roll over the dosa and serve with chutney

C) ONION DOSA
Ingredients: Urad Dal- 1 cup; Rice, finely grounded- 2 cups (Alternatively rice flour); Fenugreek(Methi seeds) - a few; Sliced onions and green chillies- 1 cup; Salt to taste; Oil- 1 tsp.

Method
1. Make the regular, plain dosa as described in the beginning.
2. Once on the pan, sprinkle onions and green chillies over the dosa(uncooked side)
3. Cook on both sides and serve

D) NEERU DOSA/COCONUT DOSA

Ingredients: Rice-1 cup; Coconut-1/2 cup; Oil- 1 to 2 tsp; Salt-to taste

Method
1. Soak rice in water for about 3-4 hours. Grind the soaked rice and coconut into a fine liquefied paste, adding sufficient water.
2. Add salt, water and mix well to prepare the batter. Make sure that the batter is very thin.
3. Heat tawa on the stove and smear little oil. Take a small quantity of the batter and pour it evenly on all sides. Tilt the pan , if needed to spread the batter.
4. Cook on one side for about 1-2 minutes. Remove and serve with coconut chutney


E) EGG DOSA

Ingredients: Urad Dal- 1 cup; Rice, finely grounded- 2 cups (Alternatively, rice flour); Fenugreek(Methi seeds)- a few; Egg-1; Salt to taste; Sliced green Chillies and pepper powder- 1 tsp; Oil-1 tbsp

Method
1. Make the regular, plain dosa as described in the beginning. Spead the batter on the pan such that the middle portion is a bit thicker
2. Take and egg, break in into a vessel, mix slightly, and pour the egg mixture over the middle of the dosa.
3. Sprinkle some salt and pepper powder on the dosa and cook on medium flame till slightly brown.

F) SPINACH DOSA

Ingredients: Spinach - 1/2 bunch; Bengal gram flour - 100g; Wheat Flour-100 gms; Ginger - one inch piece(chopped); Green chillies - 2, finely chopped;Coconut(grated) - 2 tbsp; Salt - to taste

Method
1. Wash the Spinach and boil a little. Keep aside to cool and then cut into pieces.
2. Mix all the ingredients, including spinach and coconut, with water to form a thin batter. Leave it for 5 minutes.
3. Heat a non stick pan and prepare the dosas by frying on both sides on medium flame.



G) POTATO DOSA

Ingredients- Potato- 2, medium; Rice Flour- 1cup; Curds-1/2 cup, Green Chillies- 2 to 3 ;Salt- 1 tsp

Method
1. Boil the potatoes, peel, and mash them thoroughly (using a masher if necessary).
2. Mix the mashed potatoes, and rice flour with curds. Put the sliced green chillies and salt. Add water to make it to the consistency of a moderately-thin dosa batter.
3. Pour oil and spread the batter over the pan. Cook on both sides until the dosas are golden brown. Optionally, cover with a lid for faster cooking.

Yes Rakesh. All except egg dosa. as I do not usually eat egg now. And potato dosa tastes very nice

ITS A GOOD ARTICLE BUT AT THE SAME TIME I AM NOT CLEAR ON WHAT YOU ARE SAYING ABOUT PART-1 METHOD TO PREPARE IT,BECAUSE I BELIEVE THAT THIS GIVES A GREAT AND BETTER SUMMARY OF ITS METHOD TO ANYONE THAT READS IT,NO MATTER IF THE PERSON HAD EVER UNDERSTOOD ANYTHING BEFORE OF NOT.ITS A COMMENDABLE DESCRIPTION AND I MUST GIVE YOU KUDOS FOR THAT.THANKS A LOT.

It is very excellent resource. I would like to taste all the dosa recipes. Would definitely try all these and let you know the feedback. In particular, I would try potato dosa (aalu dosa)first as you have suggested this to be good.
