Chicken and vegetable soup/stew Ingredients Chicken - 500 gms
Onion - 2 sliced and chopped finely
Tomatoes - 2 large sliced
Carrots - 2 sliced
Potato - One cut into cubes
French Beans - a few chopped into 1 inch pieces
Spinach leaves - handful chopped coarsely
Coriander leaves a handful
Turmeric powder - half teaspoonful
Red chilly powder - half a teaspoonful
Ginger - half inch piece crushed
Garlic - 7-8 pods crushed
Oil - 2 table spoonful
Salt
Pepper to taste
Method Heat oil in a pan and add the crushed garlic and the finely chopped onions. Fry for a while and add the turmeric powder and the chilly powder. Now add the crushed garlic and the chicken, Mix well. Add the vegetables an the spinach leaves.Check salt and add pepper powder. Thoroughly mix the vegetables and the chicken and let it simmer for a while. Add 3 -4 cups of water and let the stew cook on slow fire until the chicken and the vegetables are cooked well.Add more water if you prefer a watery consistency.Finally sprinkle the coriander leaves just before taking the dish off the stove
Serve this with toast or plain bread.
Chicken fry IngredientsChicken - 500 gms
Onions - 2 sliced lengthwise
Green chillies - 3-4 sliced lengthwise
Capsicum - 1 large sliced into pieces
Ginger and garlic paste - 2 table spoonful
Gharam maasala powder - 2 tablespoonful
Pepper and salt to taste
Turmeric powder - half teaspoonful
Coriander leaves
Yogurt 2 tablespoonful
MethodIn a mixing bowl add the chicken, ginger garlic paste, turmeric powder ,Yogurt salt and pepper powder.Pressure cook the chicken without adding any water.Let it not get over cooked, the pieces should stay firm.
Heat oil in a frying pan and add half the quantity of onions and fry for a while. Add the capsicum pieces and shallow fry on low fire adding salt and pepper . Transfer the capsicum, onion mixture on to a bowl . Add a little more oil to the frying pan and add the rest of the onions . Fry the onions until brown. Add the gharama masala powder and add the cooked chicken as well and mix well. Check salt and pepper and let it cook until the chicken is dry.
