Easy Garlic Kuzhambu

Garlic is best medicine for relieving gastric troubles. We should include in our food atleast once in a week.



How to cook garlic?
Don't cook or fry garlic for more than 5 minutes as the nutrients will be lost. The best
way is to eat garlic raw provided we bear with the smell of it.

Nutrients:
The main nutrients in garlic are manganese,Vitamin B6 and Vitamin C

Health Benefits:
1. Including garlic regularly in our food helps in curing blood pressure, diabetes,
cholestrol etc.
2. Garlic is also a great reliever for arthritis problems.
3. The main component of garlic named allicin improves the immune system of our body
and helps in preventing from common infections like cold,flu,stomach upsets etc.

Ingredients:

Tamarind - Size of lemon
Pepper - 1 tsp
Garlic - 10 to 15 teeths
Red chillies - 1 or 2
Mustard seeds - 1 tsp
Curry leaves - few
Oil - 2 tsp
Salt - As per taste

Method:

1. Heat 1 tsp oil in a pan for few seconds.
2. Add pepper and red chillies. Fry it for some time.
3. Fry garlic for few minutes and keep it aside.
4. Take the vessel out from a flame and allow it to cool. If you are in urgency, keep the
vessel infront of the fan so that it will cool quickly.
5. Grind the above to a fine paste in a mixie by adding little water to it.
6. Extract the tamarind juice and add the required amount of water to it.
7. Heat 1 tsp oil in a pan and add mustard seeds.
8. When the mustard seeds start sputtering out, add the grinded paste, tamarind juice,curry leaves, salt and mix it well.
9. Boil the kuzhambu well till it becomes thick and yellow foam appears on the corners of the pan.
10. Put the garlic in kuzhambu five minutes before removing it from the flame so that its nutrients are not lost.
11. Remove kuzhambu from the flame and serve it with rice.

Note:
1. If you want kuzhambu more spicy, add 1 or 2 more red chillies.
2. If you want kuzhambu less spicy, add 1 or 2 tsp of ghee to it.
3. If the tamarind is old, the juice can be easily extracted from it. If the tamarind is new, it will be hard and little difficult to extract the juice from it .So if the tamarind is new, try out the below method.
"Put the tamarind in water and heat it slightly and wait for few minutes. Then you can
extract the juice easily from it."

I taught garlic is just another spices for foods, never taught it do have a recipe on it. Maybe I'll try this one later. Thanks for sharing.
