Sea Food specialities...

Two tasty sea food specialities ..

         

Prawn salad with Mint Dressing

Prawns - 250 gms ( cleaned,and steamed with a pinch of salt, pepper and turmeric powder )
Lettuce leaves - 4 ( cut or tear 2 leaves into bite sized pieces )
Tomatoes - 2 chopped into small slices

In a bowl mix all the above three ingredients adding salt and pepper to taste.Keep aside !

For the Dressing

Mint leaves - a handful
Coriander leaves - a handful
Green chilly - 1 or 2
Ginger - a small piece
Olive oil - 1 tablespoonful
Lime juice - 2 tablsespoonful
Salt to taste
Sugar half tea spoonful
Blend all the above ingredients into a coarse paste adding a little water if needed.

Boiled eggs - 2 cut into small slices ( sprinkle salt and pepper on the slices )



To serve

On a plate spread the remaining 2 or more lettuce leaves and transfer the steamed prawns and vegetable mixture on it , Carefully place the boiled egg pieces , evenly spreading them . Finally spread the dressing evenly on top of the salad mixture.Chill and serve as a side dish .
This dish is filling and can be eaten as a meal , along with a few slices of toasted bread or rolls...Or rolled in a chapati or roti !
It is also an ideal to use as a sandwich filling.

Squid Masala with vegetables

Squid - 250 gms , cut into rings
Baby corn - 4 or 5 cut into medium sized pieces
Spring onions - 5-6 cut into even sized pieces
Carrot - 1 chopped into slices
Mushrooms - 2 or 3 sliced
Onion - 1 finely chopped
Garlic - 2 cloves crushed
Red chilly paste - soak 3 red chilies in vinegar and blend into a fine paste.
Gharam masala - 1 tsp
Soy sauce - 1 table spoon
Salt
Sugar
Lime Juice
Coriander leaves
Oil
In a bowl, add the lime juice,salt,soy sauce and the squid .Mix well and keep aside.



Method

Heat Oil in a shallow frying pan. Add the sliced onions and fry for a while, add the crushed garlic and mix well.Add the vegetables one by one ,chilly paste,gharam masala and mix well.Fry for a well until the vegetables lose the raw smell but are still crisp.Add the marinated squid with all the marinade ,sugar and salt.Extra Care should be taken while cooking Squid , since it cooks very fast, it takes only a minute or two to cook.If it is cooked for a long time it becomes very tough and leathery...

Transfer to a serving bowl and sprinkle coriander leaves on top .This can be had with steamed rice or noodles...

Yummy recipe with ingredients that make it more delicious. Sea food is a great resource for humanity. It can be utilized more through innovated preparations. Since modern man has safer equipment to go into sea he can get and make use of more sea-wealth. Thank you Usha.

Thanks a lot Paulose, I ooo love Sea food and can eat it every single day for every single meal lol...As a result I am constantly on the look out for new recipes and new way of cooking.I also experiment a lot with the available recipes...
