Spicy Prawns with mixed vegetables

Ingredients

Prawns - shelled 250 gms
Onions - 2 finely sliced
Tomato - one sliced
Spring onions - one bunch sliced into small pieces
Cauliflower - one small cup, broken nto small pieces
Baby corns - 5-6 small ones cut into pieces
Carrots - 2 sliced into rounds
Oil
Salt
Home made Chilly/garlic sauce

[To make the chilly/garlic sauce

Red chillies 15 broken into pieces
Garlic flakes 10
Sun dried tomatoes 2 chopped into pieces
Sun flower oil or Groundnut oil , 2 table spoonful
Vinegar , 2 tablespoonful
Salt
Brown Sugar
In a glass bottle add all the abve ingredients , close the lid and shake well until all the ingredients mix well .
Leave it overnight and blend into a smooth paste the next morning .Keep it in an airtight container in the refrigerator.
It can be used while making chicken, sea food and other dishes...]



Method

1, Heat oil in a frying pan.
2, Add the chopped onions and fry for a while.
3, Add the chopped vegetables one at a time and stir fry until crisp.Finally add the chopped tomato.
4, Add 2 tablespoonful of the chilly garlic sace or more according to taste.
5, Mix well and stir fry for a minute or two.
6, Add the prawns and mix well.Let the prawns cook gently until they curl up and become tender but firm.
Finally sprinkle choppe coriander leaves and serve with steamed rice or noodles.

Spicy Fish masala Curry

Any large Fish like sear fish, pomphret or any other fish of your choice , cleaned and cut into filets - half kilo
Salt
turmeric powder
Lime juice
Pepper powder
Mix all the above and keep aside.

Grind the following
Onion - sliced
coconut gratings - 2 tablespoons
ginger a small piece
Green chillies - 2
Red chilly powder - half teaspoonful
Corinader powder - one large spoonful
Tamarind - a little
(grind all the above ingredients to a smooth paste)
Onion - one sliced
Curry leaves - a few
Tomatoes - 2 sliced
corinader leaves
Oil
salt


1,Heat oil and add the sliced onions and fry for a little while until the onions are beginning to brown.
2,Add the tomatoes, curry leaves and mix well.
3,Add the curry paste and also enough waater to make a thick gravy.
4, When the gravy boils well, add the fish pieces and check salt
5, add more salt if needed..
6, Add corinader leaves.This fish masala tastes good with Boiled rice..
