In India Tikka, Tandoori, and gravies are the various varieties of chicken that are popular ones. Let us take a look at some of these most popular Indian chicken recipes.
Special Chicken Ko rma
For the special chicken korma, you will need the following ingredients
One full chicken cut into 8 pieces pat dry to remove water
Onion - one large
Green chili one
Tomatoes two
Tomato paste one tbsp.
Ginger 1/2" piece
Garlic six cloves
Curd 1/2 cup without water
Butter one tbsp
Bay leaf two
Cloves four
Cardamom black two
Cinnamon stick 1 of 1"
Cumin seed one tsp a little crushed
Salt to taste
Red chili powder according to taste
Turmeric 1/2 tsp.
Grind together (2green cardamom, a little nutmeg and 2 cloves)
Garam masala (all spice powder) 1/4 tsp.
Coriander and mint to garnish
Cooking oil 1/2 cup
Directions for cooking
First of all, prepare a smooth paste of onion with green chili with a little added water. Heat up the oil in the pan. Then add butter to fry cinnamon, black cardamom. Also add bay leaf and cloves. After the bay leaves go red, put in the onion and the green chili to fry a bit. When the water dries put chicken in and let the onion turn gold in color. Put a cover and let it cook on a medium heat. Keep until the entire water from the chicken is dried up.
Blend the tomatoes and ginger with the garlic and tomato paste. Then mix it in chicken. Cover and let the chicken cook until frying it. Once done, add 1tbsp curd when frying. You have to fry it as long as the oil gets separated completely. Decorate with coriander along with mint and once ready, serve with the nan or tandoori chapatti.
Chicken Makh ani
For the chicken makhani, you will need the following ingredients
Chicken 1/2 kg cut in small pieces
Ginger paste one tbsp.
Green chilies six
Onion one
Fresh cream 1/2 packet
Soya sauce two tbsp.
Black pepper one tbsp. (crushed)
Salt to taste
Butter two tbsp.
Oil two tbsp.
Directions for cooking
Put oil in the pan and add butter. Let the mixture heat. Then add the pieces of the chicken and let it fry these until the color is changed. Then keep the separately fried chicken. Use the same oil to fry the onion and add ginger paste into it. Then place the fried chicken. Add the powder of the black pepper, soya sauce and salt to taste. Add cream and let it cook on a steady steam for 5 minutes. Dish out to garnish with the green chopped chilies and it is ready to serve.
Mutton (chicken) Biry ani
For the chicken (chicken) biryani, you will need the following ingredients
One kg mutton
Five cups basmati rice
Six tsp ghee
Two chopped onion
Two hopped tomato
Ten green chilies
Four inch ginger
Eight pods garlic
Fifteen Cashew nuts
One tsp saffron
One cup coriander leaves
One cup mint leaves
Ten cups water
Four cardamoms
Two inch cinnamon stick
Two Jaji flower
Two anasi flower
Six cloves
Directions for cooking
First of all, soak the pieces of the mutton in clean water. Wash it nicely and thoroughly. Then drain all the possible water off and keep aside.
Take some ghee and heat it to make it fairly warm. A pressure cooker would be proffered for this. Add some cashew nuts, cardamom, a little cloves and the anasi flower. Also the addition of jaji flower along with some cinnamon would give it a good taste. Let it fry for up to five minutes. After that add some amount of onion and again let it stir fry for around five minutes.
Now put some pieces of the chopped tomato. Add the mutton pieces as well and finally put the ginger and garlic paste. Allow it to remain on lower flame as long as the raw smell goes out.
Take basmati rice and add it and mix well. Add water up to a comfortable level. Then put some coriander leaves along with some mint leaves. Let the mixture mix well. Close the lid of the cooker for better and faster results.
In the pressure cooker it will boil nicely. Put it on high flame. Let the cooker whistle at least three times. That would be an indicator of a good cooking. And here is your scrumptious mutton (chicken) biryani ready.
Dry red chili chic ken
For the dry red chili chicken, you will need the following ingredients
180 g diced chicken
Ten g onions
Ten g ginger
Ten g garlic
Five g dry red whole chilies
Five ml dark soya sauce
Five g chicken broth powder
One egg
Five g sesame seeds
Five ml light soya sauce, salt to taste and 200 ml oil
Directions for cooking
Marinate the chicken with some light soya sauce as well as some dark soya sauce. Salt is an inseparable ingredient here. Add it to taste. Also do not forget the chicken broth powder, egg and a small portion of oil.
Now, fry the chicken as long as it becomes a little tender. Remember not to over fry it. Or you will run the risk of losing the taste.
Now heat the oil in a pan and fry the red chilies until they change color.
Now add chopped garlic and ginger to the mixture. Then top it up with some onion pieces as well as some sesame seeds and toss well and fine.
Then add the tenderly fried chicken to toss again on a low flame. Keep it on the low flame until it has mixed well. Finally serve hot.
