Brinjal and Tamarind Stew

It is a very tasty recipe. Can be taken with Rice and Rotis.



1. Egg Plant (Brinjals)-500 grams
2. Onions-250 grams
3. Tamarind-50 grams
4. 12 flakes of garlic
5. 2 inches ginger
6. Cumin 1 teaspoon full
7. Coriander 2 teaspoon full
8. Black Pepper 1 teaspoon full
9. Turmeric 1/2 teaspoon
10. Green Chillies 6
10. Salt as per taste
11. Vegetable Oil 50 ml
12. Water 500 ml


Select small sized Egg Plants (Brinjals) for this recipe. Slit them four sides without making pieces. Soak them in salt water. Soak the Tamarind to extract its juice. Grind the Onions, garlic, ginger, Green Chillies, Black Pepper, Cumin, Coriander into a Paste. Stuff the paste into Brinjals and marinate them for 15 minutes. Add turmeric to the remaining paste. Now pour the oil in a Cooking Pan and heat it on a stove. Let the flame be slow. Fry the stuffed brinjals in oil. Put a lid on the Pan and leave it for 10 minutes. Now add the remaining paste to the fried Brinjals and let it fry for 5 minutes. Add the water to Brinjals and cook them for 10 minutes in a slow flame, keeping the lid on the Pan. Now add the turmeric juice and stir it with a spoon and leave it on stove in a medium flame for 5 minutes. Now the recipe is ready.
