Two Healthy Salads...

Easy to prepare, nutritious and tasty salads...

         

Salad can be a meal by itself and for weight watchers it is the ideal diet plan.There is absolutely no restriction for anyone to have their fill of salads since they are low of calories and fats..

Chicken Salad

Cooked Boneless chicken 250 grams cut into small pieces
Tomatoes 2 cut into slices
Peas one cup , boiled in salt water
Carrot - 2 grated
Capsicum one sliced into fine pieces
Cabbage a small piece shredded finely
Potatoes 2 boiled peeled and cut into pieces
Green Apple - one cut into slices with the skin
Eggs - 2 or 3 boiled and cut into slices
Lettuce leaves 5 or 6

For the dressing

Mayonnaise 3 tablespoonful
Lime juice 1 tablespoonful
olive Oil 1 large spoonful
Salt and pepper to taste
Mix the above and keep aside



Cut 2 or 3 Lettuce leaves into shreds and keep aside .In a bowl add all the salad items except the eggs and lettuce and mix well adding the dressing.
In a serving tray arrange the lettuce leaves after cutting them into largish pieces.Spread the mixed salad over the leaves and arrange the eggs on top after sprinkling salt and pepper over it.Finally sprinkle the shredded lettuce leaves on top and chill for an hour before serving..
Chicken and vegetable salad is best served as a main meal since it is very filling !
Sprouts Salad

Mixed sprouts consisting of sprouted green gram,methi seeds and chickpeas ( immerse the pulses in water for 6-8 hours , after which drain water and keep it in a colander to sprout, which should take about 12 hours )
Tomatoes 2 large cut into small pieces
Carrot one grated
Cucumber cubes one cup
Shredded capsicums one cup



Lime Juice
Salt,Pepper
Olive oil
Well mixed Yogurt half cup
Mix lime juice,olive oil,yogurt and salt and pepper in a bowl

Mix all the vegetables and sprouts add salt and pepper to taste.Pour the mixed dressing over the salad and refrigerate for an hour before serving. This can be a side dish or a meal by itself..

WAW...very healthy and mouth watering dishes. of course I will try to make both of these salads. Expect more dishes.
