How to make Attractive Tocino?

A pork meat cut into ham then marinated into a special souce that gives another owesome taste and look. It is famous and good along with fried rice or bread with matching hot coffee.


Tocino is a Spanish word which means in English "pork or bacon fat". Since it is look like bacon a famous breakfast food with bread or rice. It is famous among Western and Eurupean countries. But in some Asian countries like Philippines it is called "Tocino". A pork meat cut into ham then marinated into a special souce that gives another owesome taste and look. It is famous and good along with fried rice or bread with matching hot coffee. However, through the years not only good into breakfast, may be through easy and fastest way to cook some are no problem whether it is breakfast, lunch or dinner specially those person who bring food to the work location. It is good also for pinic and most of the children are love the Tocino may be because of taste and attractive color.

Actually some are make tocino for commercial purposes. Here, I want to share the knowledge how to make tocino not only by pork but also in chicken and beef. Actually same proceedure and ingredients are required for the chicken and beef.


1 kilo pork ham (beef ham or chicken ham sliced - as you wish)
1/2 tsp Prague powder or Pink Curing Salt (available in any grocery store)
1 tsp phosphate
2 tbsp coarse salt
10-12 tbsp sugar (depends on your taste)
2 tbsp ground star anise (optional if you don't have)
1 tablet ascorbic acid (250 mg)

Or if you don't want the above do it this way. Purchase 2 sachets of Knorr/Maggi/Mama Sitas tocino flavour which complete the whole ingredients

Making Procedure

1.Cut or slice the pork into ham (chicken or beef) to about 1/8 inch thickness
2.Not include the meat, add or combine all the ingredients in a container or bowl and mix well
3.Apply the combined mixture to the meat by rubbing or maninating or let it be for a while. Make sure that the mixture is evenly distributed across the meat
4.Place the mixed ingredients in a covered container
5.Store the covered container (with meat and mixture) in room temperature for 1 day.

Cooking Procedure

1. Separate enough amount of tocino you want to cook and put in the pan.
2. Start the stove for mild or small fire, add small amount of sauce of the tocino.
3. Let the sauce be dried then put small amount of oil for preventing over cooked until it become reddish then flip over for the same.
4. Serve with fresh tomato along with fried rice.
