Make some healthy recipes with vegetables !

A few easy to prepare healthy recipes made with a choice of vegetables

         

Mixed Vegetable soup



Ingredients

Potatoes 2 medium sized - peel and cut into large pieces
Tomatoes 3 medium sized - chop into pieces
Carrots 2 medium sized - clean scrape the outer skin and cut into rounds
French beans a handful ,remove the strings and cut into small pieces
Onion one - remove skin and chop into slices
A handful of spinach leaves washed and cut into pieces
A small piecs of ginger finely cut into slices
2 cloves of garlic ,sliced
a small piecs of cinnamon stick
Salt to taste and Pepper powder

Method

Place all the above ingredients in a cooker and add 4 cups of water.Pressure cook and cool the contents .Put the contents into a liquidiser and grind just for a few seconds.Transfer into a cooking pan adding more water if needed to get the right consistency and simmer gently checking salt and pepper.
Once it comes to the boiling point turn off the stove and season it.

For Seasoning

Butter - 1 tablespoonful
Onion - one finely chopped
Coriander leaves a handful finely chopped
Heat butter and add the onions,fry until golden brown , add the coriander leaves just before taking it off the stove and add to the soup.
Serve hot with toast or bread rolls

Stir fried vegetables



This is a very healthy dish since it does not have any spices in it .



Ingredients

Carrots 2 cut lenghtwise into strips
French beans – cut int thin strips
Cauliflower cut into small flowerlets
Tender Corn a few chopped into long strips
Peas , a handful
Onions 2 finely sliced
Oil
Butter
Salt and pepper to taste

Wash and place all the vegetables except onions in a vessel and steam for a couple of minutes in the cooker.
Heat Oil and add the fried onions and stir fry until soft and beginnng to brown. Add the steamed vegetables and toss well. Finally add the Butter and salt and pepper according to taste.
Stir fried vegetable dish can be eaten by itself since it is very healthy and nutritious or mixed with steamed rice and yogurt .

Tomato and Radish Raita



An easy to prepare Raita that is an excellent choice for summer months


Ingredients

Tomatoes 2 cut into fine pieces
Radish, 2 grated
Yogurt One large bowl
Salt and pepper
For the seasoning
Oil a table spoonful
Cumin seeds 1 teaspoonful
Curry leaves a few

Method

Beat the curds well adding salt and pepper .Keep aside in the refrigerator to chill.
Heat oil and add the cumin seeds and the curry leaves .
When the seeds splutter add the tomatoes and the grated radish.Fry for a while and take off the stove.
Cool the Tomato/Radish mixture and add to the curds.
Chill and serve as a side dish
