Wholesome One Dish Meal Ideas


When you want to take it easy and relax during weekends ,but at the same time want to make something special for your family without too much effort ,try out one of these one-dish meal ideas which are easy to prepare yet super tasty ,nutritious and wholesome !

Country Special

Rice - 2 cups ,washed and drained
Chicken - half kilo, cut into medium sized pieces
Onions - 4 sliced finely
Small potatoes - 3 or 4 cut into halves
Carrots - 2 large cut into slices
French beans - a handful , stringed and cut into pieces
Tomatoes - 4 or 5 cut into slices
Spring onions chopped , one cupful for garnishing
Nuts - a few almonds,pistachios and raisins
Ginger and garlic sliced or grated
Jeera powder and Pepper powder
Gharam masala according to taste
Red Chilly powder according to taste
Salt and oil
Butter a table spoonful

Method

Take a large cooking pot with a lid and add 2 or 3 large spoonfuls of oil and the butter.When it is hot add the sliced onions and fry for a while.Add the ginger and garlic and the vegetables and saute it.
Add the Tomatoes and the chicken and all the spices.Check salt and add 4 cups of water and let it come to a boil.
Add the rice and mix thoroughly checking salt and pepper.Close the lid and reduce flame and cook on slow fire turning the dish once in a while.Simmer until the rice is cooked .
Garnish with the nuts and the spring onions and the dish is ready .Serve hot with some yogurt and pickles..

Crusty Quiche



Eggs - 5 or 6
Milk one large cup
Potatoes 4 peeled and grated
Onions 2 sliced
Spring onions- chopped one cup
Spinach leaves ,one bunch cleaned and chopped
Tomatoes -3 cut into small pieces
Grayed Cheese - One large cup
salt,pepper and oil

Method

In a bowl blend the eggs with the milk , salt and pepper, until frothy.
Heat oil in a shallow frying pan and add the sliced onions and the grated potatoes ,fry for a while.Add the spinach and when it reduces add the tomatoes and mix well.Add salt and pepper to taste and finally the spring onions.Mix well and evenly flatten out and spread the mixture on the pan .
Pour the egg mixture on top and let it cover the pan evenly over the vegetable mixture . Let the eggs set and before taking it off the stove spread the grated cheese over the quiche and close with a lid and cook on low flame for a minute .Insert a knife and make sure that the egg mixture comes off clean before switching off the stove.
Cut into wedges and serve with a green salad...
optional :- You can add chopped ham or sausages along with the vegetables..

Special Khichdi



Rice - 2 and a half cups - wash , drain the water and keep aside
Moong Dhal - 1 cup ,wash in water ,drain and keep aside
Onions - 2 large sliced
Carrots - 2 0r 3 sliced
Tomatoes - 3 sliced
French Beans , a handful cut into pieces
Curry leaves a few
Green chillies 2 or 3 sliced
Chilly powder,salt
Oil
Cumin seeds
Coriander leaves one cup

Method

In a pressure cooker heat oil and add cumin seeds ,sliced onion ,green chillies and the chopped vegetables and tomatoes .Mix well and add salt,chilly powder and the dhal.Mix well and let it simmer for a while.
Now add the rice and 5 cups of water and enough salt and pepper powder if required.Finally add the curry leaves and close the lid of the pressure cooker.Cook until done.Sprinkle coriander leaves on top ,once the dish is done.
Serve hot with papads,pickle and curds..
