Some healthy and nutritious recipes..

         

Sprouted Green Gram ( Moong) stirfry



Ingredients

1 cup sprouted Green gram (Moong)
1 onion finely chopped
1 or 2 green chilies chopped
1 tsp mustard seeds
1/4 tsp cumin seeds (jeera)
A few curry leaves
1/4 tsp turmeric powder
1 tsp lime juice
1 tb sp oil
Handful of fresh corinader leaves chopped

Method

1,In a shallow frying pan heat the oil and add the mustard seeds and the cumin seeds.

2,After a while add the curry leaves, turmeric powder and the sprouted green gram (moong).

3,Sprinkle some water and salt to taste and let the green gram cook for 4-5 minutes until it loses its raw flavor.

4,Mix in the green chilies , the chopped corainder leaves and the lime juice and serve.

Lauki ( bottle gourd) Sabzi( curry)



Ingredients

Lauki 400 gms - peel the skin and cut into cubes
Tomatoes - 2 chopped into small pieces
Onion - 1 sliced
Curry leaves a few
Green chilies to taste one or two chopped finely
Oil - 2 tb sp
Cumin seeds
Red chili powder 1 tsp
Coriander powder 1 tb sp
Coriander lleaves - a handful
Turmeric powder a pinch
Salt and sugar to taste

Method

1,Heat oil and add the cumuin seeds.
2,Add the onions and stir fry, add the turmeric powder and the Lauki.Mix well.
3,Add the rest of the ingredients - green chilies,curry leaves, chopped tomatoes,chili powder salt and sugar.
4,Add one cup of water and simmer gently until the Lauki is tender.
5,Garnish with coriander leaves and serve with steamed rice or rotis.

Mixed vegetables stir fry



Ingredients

Carrots - 2 chopped
French beans - chopped 1 cup
Cabbage - chopped 1 cup
Spring onions - 1 cup chopped
Corn - 1 cup
Cauliflower - 1 cup chopped
Peas - 1 cup
Onion - one chopped
Salt and pepper to taste
Lime juice to taste
Oil
Coriander leaves a handful

1,In a steamer mix in all the vegetables and steam for 3-4 minutes.
2, Heat oil in a frying pan and add the chopped onion and fry for a while.
3, Now add all the steamed vegetables, salt,pepper and mix thoroughly.
4, Take off the stove, sprinkle lime juice and mix in the coriander leaves and serve as a side dish with rice or rotis.

The lauki sabzi that I have written about can be made with other vegetables as well like potatoes,french beans or brinjals.They all taste equally good since it is spicy and wholesome !
