Dum Aaloo is named so because it is cooked under Dum or pressure.
Potatoes-6 to 8 small size
Vegetable Oil-for deep frying
Coriander Powder-1&1/2 spoons
Fennel Powder-2 spoons
Dry Ginger Powder (A pinch)
Asafoetida (A pinch)
Cuminseed - 1 tbsp
Cinnamon-1 inch piece
Red Chilli Powder-2 spoons(u can restrict it to ur choice)
1)Boil Potatoes,then poke the potatoes with a fork.
2)Heat the oil for deep frying, on a medium flame. Fry all the potatoes till golden brown.
Drain on paper towels and keep aside.
3)Mix the Curd well & stir it with Coriander powder,fennel powder & dry ginger powder.
4)Heat the oil(3 spoons) on low flame ,add Asafoetida(little bit),Cuminseed,cloves,Black cardamom,Cinnamon.
5)Add Red Chilli Powder & stir the content.
6)Now add the curd mixture in it & cook it for 2-3 mins.
7)Add the fried potatoes now & mix well in it & cover.
8)cook it for 2-3 mins on medium flame, now open the pan cover & sprinkle some water over it & cover again.
9)Do it 2-3 times so that Patatoes go soft.cook for 5 more mins with cover.
10)Serve hot with Rice or Naan.
